Spanish signature

Gochujang, Payoyo cheese and tarragon béchamel — the bravest tartare in Stockholm, signed with the house's own name.

The review

Two brothers on Södermalm serve 'Spanish food, for real' — pointedly not tapas — and their tartare is confident enough to carry the family name: Tartare de Aleks y Filip. The build reads like a dare. Gochujang where the hot sauce should be; Dijon and capers holding the French line; red onion and egg yolk on classic duty; Andalusian Payoyo cheese instead of parmesan; and a tarragon béchamel that has no business near raw beef yet somehow signs the plate. Korean heat, Spanish salt, French herbs — the most original composition on this list, and with a Rioja from their deep Spanish cellar it sings. Why only eighth? Ambition occasionally muddies focus: some bites are brilliant, others crowded. But order it. Nobody else is making this.
