The review
Bisous opened on Artillerigatan in 2024 and commits to the bit completely: white tablecloths, sturdy wooden chairs, red drapes, crystal chandeliers, and a menu that paints its steak minute onto a yellow cow. It would be easy to file under Paris cosplay, until the råbiff lands. The beef is hängmörat innanlår — topside, the traditional Swedish råbiff cut, hung before it is cut — and this is the only menu on the list that tells you the meat has been aged. It shows in a rounder, deeper flavour than the Stockholm average. The binder is not dijonnaise but cognac mayonnaise: cognac is what Paris pours into its pepper sauce, and here it gives the beef a warm, faintly sweet brandy note. Aged Gruyère, the cheese that crowns the onion soup a few lines down the same menu, does the salt work that parmesan does elsewhere in this city; cornichons and silver onion cut through it; potato crisps put the crunch inside the dish instead of beside it. Every component carries a French passport and none is there for show. Two things keep it behind Broms. There is no yolk — strictly, the yolk is already in the mayonnaise, which is clever but leaves the emulsion to carry all the richness — and the full 315-kronor portion comes with crisps, not fries; those are a separate 55 kronor. Order the big one, add the fries, and sit under the chandeliers.
