All-day bistro

Östermalm's second living room holds a black belt in råbiff — sugar snaps and pickled silver onion give it snap the classics forgot.

The review

Broms is Karlaplan's all-day living room — deli, bakery, bar, weekend brunch — and it would be easy for the kitchen to coast. Instead the råbiff is the house's calling card; local critics literally credit the place with a black belt in it. Dijonnaise binds the beef, shredded sugar snap peas land a fresh green snap no classic recipe thought of, fried onion and parmesan bring salt and crunch, and pickled silver onion sweeps acid through at the finish. 'Halv' as a starter is the neighbourhood move; 'hel' with fries is dinner. A tartare with the confidence of a bistro that knows its regulars by name — modern without gimmicks, precise without fuss. If I lived on Karlavägen, this ranking might look different.
