The review
The room alone stacks the deck: a 1955 glass petrol station on the Strandvägen quay, heritage-listed, glowing over the boats of Nybroviken. The råbiff arrives under a frankly irresponsible snowfall of parmesan — not classic, and not sorry about it. Beneath: cool, clean beef bound in sharp dijonnaise, sweet cubes of yellow beet, capers on acid duty, roasted onion for crunch. Take the Classics version and a stack of golden pommes frites turns up to do the shovelling. Every element earns its seat — sweet, salt, acid, fat, crunch, in ratio. I have eaten this dish in three countries; this is the plate I measure the others against. If Glashuset really does shrink into a cocktail lounge one day, someone should heritage-list the tartare too.
